Observation: No sanitizer solution was available on site to sanitize the food prep tables. Upon asking, staff stated that they were not aware of sanitizing the food prep surfaces. Staff couldn't find the bleach bottle during inspection.
Corrective Action(s): Food contact surfaces such as prep tables must be cleaned and sanitized regularly with an approved food grade sanitizer to prevent the risk of food contamination.

Observation: Raw chicken containers were stored on top shelves & produce was found on bottom shelves.
Corrective Action(s): To prevent the risk of cross contamination of ready to eat food such as produce from meat juice, always store the raw meat products at bottom shelves.

Observation: Mouse droppings were observed in one corner of back storage area.
Corrective Action(s): Remove the mouse droppings and disinfect the area with 1 part bleach to 9 part water solution. Use proper PPE during cleaning.

Observation: Door of chest freezer had cracks on the inside and the insulation foam was partially coming out. Staff stated that an order for new chest freezer has been placed.
Corrective Action(s): Ensure thet chest freezer is maintained in good working order.

Comments

Routine inspection conducted at the food facility and the following observations were made during the inspection:

Temperature (coolers to be at 4C or less, freezers at -18C or less):
- Walk-in cooler at 4C
- Stand-up freezer at -1C
- Chest freezer at -14C
- Prep cooler at 4C (top ) & 3C (bottom)

Storage:
- All food items were stored at least 6" off the floor.
- All food products were found either in original packaging or covered inside coolers.
- Storage area was well-organized.
- Chemicals and cleaners were stored separate from food preparation areas.

Sanitation & Maintenance:
- Hand wash station was adequately stocked with hot/cold running water, liquid soap, and single-use paper towels.
- Low temp mechanical dishwasher available and the concentration of chlorine residual recorded at 50ppm.
- General sanitation of facility was satisfactory.

Pest Management:
- Mechanical traps were present throughout the facility.

Administrative:
- Operating permit was posted in a conspicuous location.
