Observation: No labels were noticed on any of the spray bottles of cleaning and sanitizinng agents.
Corrective Action(s): Ensure to provide labels on each spray bottles of cleaner or sanitizer indicating the contents and dilution (e.g. 1 part bleach: 50 parts water) based on the actual dilution used. Bleach water sanitizer solution to be made using 1 oz of bleach per gallon of water. Make a fresh solution at least twice a week. ( Immediately).

Comments

Ensure that all meat processing machinery and cutting tables etc. are cleaned using a de-greaser and hot water as per manufacturer's instructions, rinse with water and then sanitize using 200-300 ppm chlorine bleach
Allow at least 2 minute contact time with bleach sanitizer if surfaces are to be rinsed after sanitizing.
* Meat grinder must be moved to the walk-in cooler if not cleaned and sanitized every 2-4 hours.
* Ensure to thoroughly clean and sanitizer the packaging and shrink wrap equipment prior to re-packaging ready-to-eat meats.
* Repaint the carcass railings by May 31, 2019.
