Observation (CORRECTED DURING INSPECTION): Bean sprouts in front servery were not stored at 4 degrees Celsius.
Corrective Action(s): Bean sprouts were found sitting in a pool of melted ice and at a temperature of 10 degrees Celsius. Bean sprouts must be kept at 4 degrees Celsius or less by making sure the ice is replenished regularly. Alternatively, the bean sprout may be stored in the cooler at the front of the servery. Operator corrected by replenishing ice into container of bean sprouts.

Observation (CORRECTED DURING INSPECTION): Kitchen hand sink was not equipped with hot running water.
Corrective Action(s): Hand sinks shall be equipped with hot and cold running water for hand washing. Operator corrected this violation by tightening the hot water knob on the faucet. Operator said they were not sure when this problem occurred as his staff did not inform him there was a problem. Informed operator to remind all staff that hands must be washed properly after each task.

Observation: Vegetables and cooked foods not stored above raw foods in preparation cooler.
Corrective Action(s): Vegetables and all ready to eat foods shall be stored above raw foods in the cooler to prevent contamination. Please rearange the items in the cooler to ensure all vegetables and ready to eat foods are stored on the top rack.

304 - Premises not free of pests [s. 26(a)]
Observation: Mouse droppings found along the wall of the side hallway that leads to the back door and in the dry storage room beside the back door.
Corrective Action(s): Clean up all droppings and sanitized the affected areas. These areas must be monitored on a daily basis and any droppings that are found shall be cleaned up immediately. Premise is serviced by a licensed pest control company and mouse droppings were not found anywhere else.

General observations:
Coolers were 4 degrees Celsius or less.
Freezers were less than -18 degrees Celsius.
Hot holding units were over 60 degrees Celsius.
Food storage practices were satisfactory, except as noted above.
Storage areas were generally organized.
Hand sinks were stocked with liquid soap and paper towels.
All sinks (except as noted above) were equipped with hot and cold running water.
Staff hygiene and food handling practices appeared satisfactory.
Bleach sanitizer for wiping cloths had a chlorine concentration of 200ppm.
Low temperature dishwasher had a chlorine sanitizer concentration of 50ppm,.
General sanitation was satisfactory.
Chemicals were stored in a safe manner.
