Observation: A used plastic container was being used to store rice. This container was then placed inside the rice cooker to hothold rice. Temperature of the rice was 60 degC.
Corrective Action(s): Discontinue this practice. Use a foodgrade container for storing rice. Reheat in a microwaveable container. Do not reuse single use food containers.

Observation: Two of the cutting boards stored beside the cooler on the far end are dicolored and have large black stains on them.
Corrective Action(s): Replace these cutting boards.

200ppm Chlorine is available in a spray bottle for sanitizing purposes
Dishwasher rinse was 73 degC at plate level
Sushi rice pH was around 4.0
Operator has FS Level 1 certification (Expiry Sept. 24, 2027).
