Observation: Door seal of the prep. cooler does not provide a tight seal.
Corrective Action(s): In the interim, repair the gasket of the prep. cooler to ensure it provides a tight seal and is maintained in a condition that is easy to clean; Correct as soon as possible within 2 weeks. The gasket of the prep. cooler door should be replaced with a new intact gasket that provides a tight seal; Correct within 3 months.

Observation: Cooking equipment with an altered ventilation system was observed near the 2-compartment sink; this was done without health approval.
Corrective Action(s): Do not use the above-noted cooking equipment as it is currently not health approved for use. Remove the above-noted cooking equipment from the food premises; Correct within 1 month.

If you are interested in using the above-noted cooking equipment, submit three hardcopies of the floor plan diagrams for the proposed alterations, drawn to scale (with an equipment and finishing schedule), with an updated list of menu items and updated food safety plan to the Environmental Health Officer for review and health approval. The cooking equipment (gas burner) requires to be located near a conveniently located and accessible handsink, have appropriate ventilation, and be physically separate and protected from potential sources of contamination (e.g. ware-washing areas).
