Observation (CORRECTED DURING INSPECTION): Mashed potatoes, butter sauce, 3 large trays of meat curry, 5 x 4L jugs of milk, 6 x 1L containers of whipped cream, one tray of raw chicken, rice, gulab jamun, rasmulai, 10 LB x 3 blocks of paneer, chickpea container (1.5 kg), 1 1/2 trays of samosas (100 samosas) inside the walk-in cooler were all measured at a temperature of 11C. Ambient temperature of the walk-in cooler was at 11C and did not cool throughout the inspection.
Corrective Action(s): Aforementioned items were discarded at time of inspection. Pictures taken. Ensure that ALL items are stored at 4C or less at all times. Temperatures above 4C may lead to the proliferation of bacteria that can cause foodborne illness / production of their toxins.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: The following areas will require further cleaning:
1. Flooring underneath the dry storage corner contains fallen debris
2. Area underneath the cook line, especially underneath the tandoori oven, is grimy and saturated with debris
3. The area between the DEEP FRYER and the TANDOORI OVEN needs to be throughly degreased.
4. Cooling racks inside the walk-in cooler are soiled and need to be cleaned.
5. Wooden pallets inside walk-in cooler, and corners of walk-in cooler have accumulated grime.
Corrective Action(s): Clean and degrease the aforementioned areas.

Observation (CORRECTED DURING INSPECTION): Walk-in cooler was at an ambient temperature of 11C at time of inspection. Condenser was turned off.
Corrective Action(s): Cooler was adjusted to an ambient temperature of 4C or less during the inspection. KEEP YOUR TEMPERATURE LOGS UPDATED. It is essential that you maintain your walk-in cooler in good working order.

Comments

Routine inspection conducted. General sanitation is good, but certain areas require further attention. The following was noted at time of inspection:

1. Temperatures
- Walk-in cooler at 11C
- Prep cooler at 3C
- Sweets display cooler at approximately 4C
- Chest freezers at -18C or below
- Temperature logs were, once again, not taken since August 27, 2019. As a result, the walk-in cooler which is currently malfunctioning has not been checked!

2. Hygiene and Sanitizing
- Hand wash stations adequately stocked with hot/cold running water, liquid soap, and single-use paper towels
- Bleach sanitizing pail available on-site at 200 ppm chlorine residual
- Low-temperature dishwasher sanitizes at final rinse cycle of 50 ppm chlorine residual
- Ventilation canopy in satisfactory sanitary condition

3. Storage
- Food products stored 6" off the floor
- Majority of food products were covered at time of inspection

4. Pest Control
- No evidence of recent, visible pest activity noted at time of inspection
- Last professional pest control company's visit was back from Sep 3, 2019 and revealed no signs of rodents

5. Administrative
- Permit posted and up-to-date
- Manager has FoodSafe 1

Follow-up inspection to occur to assess sanitation issues addressed via code 306 above.
