Observation (CORRECTED DURING INSPECTION): Observed glasswasher had 0ppm chlorine residual during the time of inspection. Sanitizer tube/pump was primed during the inspection and observed 50ppm chlorine residual after three cycles. The minimum requirement for chemical dishwasher is 50ppm under the Food Service Code. Test strips were available but regualr monitoring was not logged/recorded. This is a critical hazard as improper dishwashing can lead to pathogen growth on these surfaces.
