Observation (CORRECTED DURING INSPECTION): Equipment was being washed in a dishwasher that is unable to sanitize properly.
Corrective Action(s): Until the dishwasher has been fully repaired, follow these instructions for manual dishwashing:
1. Clean and sanitize one sink to be designated as the sanitizing sink
2. Fill up this sink with 100 ppm bleach sanitizer (1/2 teaspoon bleach for every 1L of water used)
3. Wash all equipment in dishwasher
4. Submerged washed equipment in the beach sanitizer completely for 2 minutes
5. Allow equipment to air dry before use

Observation: A large hole is at the bottom of the wall on the right side of the back door.
