- 100ppm chlorine sanitizer was available at the sushi bar area. Reminded staff to keep wiping cloths stored in sanitizer solution when not in use. Do not store/keep wiping cloths on counters. - No rolls were premade at time of inspection. Staff member working at the sushi bar said rolls are made per order now. Do not keep premade sushi rolls stored at room temperature. If rolls are premade they must be stored in the cooler unit at 4C or less.
