REPEAT VIOLATION - observed multiple containers open and food is exposed inside the walk-in cooler.

Observation:
- Rodent droppings observed throughout the premises.
Corrective Action(s):
- Reviewed the recent report from professional pest control company - report indicates that no catches observed in tincap traps and a hole was blocked. Traps alone will not prevent rodents - regular cleaning is required. Ensure to clean and sanitize all the areas where droppings are observed. Underneath counters and cabinets at the front. Along the wall perimeters inside the kitchen and inside the storage room.

Observation:
- Food debris observed on the sandwich prep cooler unit and around the rubber seals of the cooler doors.
- Grease pooling underneath/behind deep fryer.
- Food debris build-up observed on the handles of deep fryer baskets.
Corrective Action(s):
- Clean and sanitize the sandwich prep cooler. Recommended to change the door rubber seals as they are getting crumpled and hard to clean.
- Remove the grease. Scrub and clean the floor underneath the cookline & deepfryers. This should be done EVERY DAY before closing.
- Clean and sanitize the deep fryer baskets. Scrub off all the hard-to-remove debris.

- The handle lever of sanitizer spray bottle inside the kitchen gets stuck after each use.

General cleaning required throughout. Ensure to clean all floors including underneath dishwasher, storage shelves, cabinets etc.

All handsinks are fully equipped. *Staff washroom paper towel holder is not sturdy and paper towel is prone to dropping. Install a new holder/dispenser.
50ppm chlorine detected from the final rinse water of the low temperature dishwasher.
All coolers at 4C or below.
All freezers at -10C to -26C.
Hot held food items (soups, rice) at 60C or above.
Ice machine in sanitary condition.

Covers for the ceiling lights are missing in the kitchen. Ensure covers are installed for the ceiling lights.
