Observation (CORRECTED DURING INSPECTION): 1. High temperature dishwasher was not on at start of inspection.

Corrective Action(s): 1. Turn on high temperature dishwasher so unit is warmed and ready for cleaning whenever kitchen is in operation.
2. Proper mixture of bleach:water for a bleach sanitizer solution is 1/2 tsp unscented bleach : 1L water. Recommended to have ratio written down or posted so staff knows how much bleach to add to bottle.

Observation: 1. Range hood baffles observed to have build up of grease. Staff stated baffles are cleaned every 2 weeks.
2. Dirty/grease laden equipment (wok) stored in dry storage area.
Corrective Action(s): 1. Clean baffles regularly. If build up is within 2 weeks, recommended to clean more frequently. Recommended to develop and maintain cleaning log to ensure equipment used are all cleaned and sanitized regularly.
