Observation (CORRECTED DURING INSPECTION): Crispy pork internal and surface temperature between 45-48C, 1hr.
Warming unit is holding temperature in the far end closer to sun and window.
Operator has not recorded temperatures for hot holding since Oct. 4, 2022
Corrective Action(s): Rehead pork to 74C. Take the temperature. (Operator reheated pork in oven during the inspection)
Monitor temperature of warming unit, both internal and ambient. Ensure it is 60 or hotter.
Use time as control as well and follow food safety plan.
Record tempearture on logs available.

Observation: BBQ Meats (duck, chicken, crispy pork belly/rib) stored in hot holding unit since noon. Between 41C to 43C surface and internal temperatures.
Correction: If >2hrs, follow food safety plan.
Cook with oven past 74C.
Turn on heat lamps to higher temperature to keep at 60C.
Or discard for the day.
Use a thermometer to check the temperature.
