Warming unit is holding temperature in the far end closer to sun and window. Operator has not recorded temperatures for hot holding since Oct. 4, 2022 Corrective Action(s): Rehead pork to 74C. Take the temperature. (Operator reheated pork in oven during the inspection) Monitor temperature of warming unit, both internal and ambient. Ensure it is 60 or hotter. [s. 14(2)] Observation: BBQ Meats (duck, chicken, crispy pork belly/rib) stored in hot holding unit since noon. Between 41C to 43C surface and internal temperatures. Correction: If >2hrs, follow food safety plan. Cook with oven past 74C. Turn on heat lamps to higher temperature to keep at 60C. Or discard for the day. Use a thermometer to check the temperature.
