Dishwasher final rinse was 74 C / 165 F or hotter internally at plate surface Cold holding units were 4 C / 40 F or colder Freezer unit was -18 C or colder. Sanitizer was available and at 200 ppm chlorine in buckets to store wiping rags. Ensure all food covered in storage. Permit fee to be paid today for fiscal and next fiscal.
