A follow-up inspection was conducted, the following observations were made:
- Premises has been cleaned from top to bottom. Food and grease has been removed.
- Scrub the FRP walls more, as there is still food stains on them.
- Pest control treated the facility, dead cockroaches were found.
- Low-use dishes and equipment must be moved and washed weekly to prevent harboring of cockroaches.
- All equipment must be moved away from the walls at least once a week to clean beneath and behind them.
- All foods must be covered with clean saran wrap at the end of the night to prevent providing a food source.
- The dry storage room was re-organized and all foods stored 6" off the floor. Increase the height of the lowest shelf so that a mop can get under it for cleaning purposes.
- Increase pest treatment to every 5-7 days, until there are no more cockroaches.
- The sanitation level is satisfactory. This level must be maintained every day to eliminate the cockroach problem.
- Closure order rescinded.
