Observation (CORRECTED DURING INSPECTION): Frozen chicken is thawed in sink with warm water (and then immediately cooked).
Corrective Action(s): Thaw frozen food in the cooler (at 4C) or in cold water that is changed frequently. Sink to be sanitized before use and after use.

Observation: Some flour on shelves and floor in dry storage room. Floor under cooking equipment requires cleaning.
Corrective Action(s): Deep clean kitchen and follow a routine written cleaning schedule that includes cleaning under equipment, ceiling and walls of walk in cooler, shelves, washrooms, etc.

Routine check.
Coolers are at 4C/40F or colder.
Thawing of frozen food - see above.
Hot holding - food is >60C/140F.
Food on menu is fully cooked (>74C/165F).
Hand washing sinks have warm water, liquid soap, and paper towels. Poster provided.
Food Safe - operator is on site.
Food safety plan - keep on site and review thawing procedures.
Sanitation plan - using commercial dishwasher and chlorine sanitizer.
*Wiping cloths - use 1 tsp domestic bleach in 1 liter of water.
Using chlorine to sanitize sinks after cleaning and rinsing them. Poster provided.
Commercial dishwasher has a final chlorine sanitizing rinse - 50ppm+ detected - good.

Pest control program is in place. Improve cleaning. Monitoring is in place.
