Observation (CORRECTED DURING INSPECTION): Wiping rags in use without maintaining sanitizer reservoirs.
Corrective Action(s): All wiping cloth rags in use are to be stored in a container of sanitizer solution (100 ppm chlorine, 1 tea spoon of bleach per 1 litre of water).

Observation: Front swing gate entrance: sweeps on both sides of gate are damaged allowing for pest entry into kitchen area.
Corrective Action(s): Repair / replace sweeps or modify gate design such that any gaps between floor and adjacent millwork are less than 1 cm to effectively exclude rodent entry.
