Prep area room temp at 6-7 deg C. Staff hygiene satisfactory - clean uniforms/ hair nets, hand washing observed Chicken rotisserie area: Hand sink properly maintained. Logs well-maintained hot holding for chicken = above 60 deg C Note: Health permit need to be posted. Obtain replacement for permit if you cannot find it.
