- Mochi scoop is stored in ice water between uses.

- 200 ppm chlorine bleach sanitizing solution available for sanitizing food contact surfaces.
- Chlorine bleach available to make sanitizing solution for sanitizing equipment. 100-200 ppm chlorine bleach solution = 1 tsp chlorine bleach + 1 tsp water.
- Manual 3-compartment dishwashing and sanitizing procedures reviewed with operator.
- General sanitation of premises (unless otherwise mentioned) appears satisfactory.
- FOODSAFE Level 1 requirements are in compliance. Operator has valid FOODSAFE Level 1 certificate (expires 22-June-2028).
- No rodent or cockroach activity noted at time of inspection. Monthly pest control service provided by a pest control company.
