Observation (CORRECTED DURING INSPECTION): Cold potentially hazardous food was stored above 4 degrees C in the walk-in-cooler, which was at 5.2 to 6.7 degrees C.
Corrective Action(s): Operator transferred the potentially hazardous food (e.g. deli meat, cheese, curry sauce and cooked masala) to the bottom component of the pizza cooler. Operator transferred the samosas and box of pre-packaged paneer to a freezer at or below -18 degrees C. Ensure cold potentially hazardous food is stored at or below 4 degrees C.

Observation: 1. Walk-in-cooler temperature was above 4 degrees C (measured between 5.2 and 6.7 degrees C). Walk-in-cooler door seal appeared broken in an area.

2. Plumbing fixture below the 2-compartment sink still requires repair to prevent a small leak.
Corrective Action(s): Do not store any potentially hazardous food inside the walk-in-cooler until it can be maintained at or below 4 degrees C; Effective immediately.

Adjust, repair, or re-service the walk-in-cooler to ensure it maintains a temperature at or below 4 degrees C; Correct by tomorrow (February 16, 2023). Ensure the walk-in-cooler has tight closing door seals kept in good working order; Correct by tomorrow.

2. Ensure the appropriate repairs are made to the plumbing fixture below the 2-compartment sink to prevent the leak; Correct within 2 weeks.

Observation: Thermometer was inaccurate inside the walk-in-cooler.
Corrective Action(s): Replace the thermometer inside the walk-in-cooler with an accurate thermometer; Correct today. Ensure each cooler is equipped with an accurate thermometer; Correct today. Operator moved a thermometer from the sweets cooler to the walk-in-cooler to monitor its' refrigeration temperature in the interim.

Observation: 1. Both cooling wands were observed stored on the floor near the chest freezer.
2. Stand mixer bowl was previously used last night and it was not maintained in a clean condition.
Correction: 1. Both cooling wands were re-located to the 2-compartment sink to be manually washed, rinsed, sanitized, and air dried. Ensure to store the cleaned and sanitized cooling wands on a clean shelving unit or designated storage area at least 6 inches off the floor and away from sources of potential contamination; Correct today and prior to reuse.

2. Clean and sanitize the standing mixer bowl; Correct today and prior to reuse. Ensure stand mixer bowl is cleaned, sanitized, and air dried at least every 4 hours between use and after final use each day.

Follow up inspection:
-Previously affected areas had been cleaned and sanitized to remove rodent droppings. Note: Provide a copy of your most recent pest control service report to the Environmental Health Officer.
-Both cooling wands had been cleaned, sanitized, air dried, and stored on a clean shelving unit.
-Bowl of stand mixer was in a clean condition and it was stored with a storage lid made of durable, easy to clean, and impervious to moisture materials.
