Observation: Food debris on the door off the walk-in cooler; dust & grease on the ventilation hood; & food debris on the floor.

General sanitation - acceptable but required attention in some areas (see violation sections).
Handwashing sinks (in the prep area, pizza prep area and washrooms) supplied with hot and cold running water, liquid soap and paper towel.

Pizza prep cooler < 4 C;
Chest freezer at -18 C;
Thermometers for cold units - available;
Quats sanitizer is available in a spray bottle at 200 pm concentration.
Three-compartment sink - satisfactory;
Dry storage - satisfactory;
Note: Hot Holding Unit is not in use at the time of inspection.
No evidence of pest activity.

Recommendation:

- Please clean with hot water & soap cutting boards (as well as on the pizza prep. cooler); and sanitize with Bleach.
- Organize the storage.
- Clean and sanitize a dish dry plastic holder from black mold.
- Empty insert containers for the pizza cooler must be cleaned and sanitized before freshly cut food items are going in.
