Observation: Some rodent droppings observed on floor in dry storage room
Hair and debris found on floor in food preparation areas. Clean floors with mop to ensure adequate cleaning is occurring.

Corrective Action(s): Spray rodent droppings with 200ppm chlorine solution or equivalent. Remove droppings from area. Wet affected area with 200ppm chlorine or equivalent and soak area.
Inspect facility for points of entry for pests. Seal any holes.
Follow recommendations advised by Pest Control Company Technician.
Consult with mall in regards to gap under exterior door directly across from storage unit. This may be an entry point.

- Hot Holding achieving temperatures of greater than or equal to 60 degrees Celsius - Chili cooker observed to be at 68 Degrees Celsius for chili
- Sanitizer solution in use throughout food preparation areas and at concentrations of greater than or equal to 200ppm QUAT
- Sanitizer solution from dispensing unit at concentrations of greater than or equal to 200ppm QUAT
- Test strips available for use
- Two functional sink plugs available for use observed
- Ice machine and scoops in good sanitary condition
- First In First out and date stamping methods observed in use
- Back door closed during inspection

- Cooler handles and seals in good sanitary condition

- Blenders in good sanitary condition - rinsed after each use and washed and sanitized in back area approximately every 2-4 hours - EXCELLENT!
- Commonly used items are cleaned and sanitized every 2-4 hours. This includes juicer and knives - EXCELLENT!
- Staff Personal items kept separate from kitchen equipment
- FoodSafe Certified staff present during inspection

NOTE: Pest infestation in facility seems to have been eliminated - No evidence of pests within food preparation area today - EXCELLENT!
