All coolers were < 4 C. All freezers were < -18 C. Hot holding was > 60 C. Hand sinks were supplied with hot and cold water, soap and paper towels. Temperature records were maintained. Quats sanitizer solution was at 200 ppm. Test strips available on site. No evidence of pests. Ensure that records are kept on site. General sanitation was satisfactory.
