Observation: 1.Commerical can opener blade has accumulation of old food debris adhered to it.
2. Ice machine trough and piping has dark substance growth.
Corrective Action(s): 1.Clean and sanitize can opener blade to be free of any food debris to prevent potential contamination when opening new canned food items.
2. Remove all the ice inside to thoroughly clean and sanitize the ice machine interior following manufacturer's instructions. Discard first batch of ice that could have residual cleaning chemicals.

Observation: Mouse droppings noted in areas within the kitchen and cafeteria grounds:
- Corner garage door pillar
- Corner in cafeteria by moveable steam table
- Adjacent storage room in corners and behind shelving
- Along walls underneath the dry storage racks (some droppings on top of storage bins)
- Behind the grill, cooking ovens and by corner of the two 2-compartment sinks
Corrective Action(s): Remove all the pest droppings from areas noted above. Clean and sanitize all areas mentioned above. Continue to work with pest control services to try to determine where entry is.

Observation: Ongoing effort observed to mitigate pest entry but problem still persists. One area of entry observed during inspection is by garage door corner pillar where pests droppings were heavily noted around corner area and seen noted inside pillar where a hole is.
Corrective Action(s): Continue to work with licensed pest control services to plug up all entry points within the premise. Seal any points of entry when possible.

Observation: Minor amount of dust and food debris adhered to the wire storage racks and fan grate in the walk-in cooler unit.

Routine inspection conducted.

Walk-in cooler unit measured at 4 degrees C or less.
Walk-in freezer unit measured at -18 degrees C or less.
Hot-holding units were turned off at time of inspection. Ensure all hot-held items are held at 60 degrees C or more during service.
Cooling of soup observed with use of shallow metal pans.
Hand sinks all supplied with hot/cold running water, liquid hand soap and single use paper towels.
Two two-compartment sinks available in the back with drain plugs.
High-temperature dishwasher measured at 75.8 degrees C at the plate surface on final rinse cycle.
Sanitizer bucket with clothes at 200 ppm QUATS.
Chemicals are stored separately and away from food.
FOODSAFE level 1 or equivalent requirement met.
