Observation (CORRECTED DURING INSPECTION): Food items (sausasage rolls, marinara sauce, and strudels were probed) stored in walk-in cooler were measured to be at ~8C. Walk-in cooler air temperature was measured to be at 8C.
Corrective Action(s): - All food items containing meat, dairy, and eggs were relocated to a working cooler at time of inspection. All cold potentially hazardous foods must be stored at 4C or colder.
- Operator adjusted temperature of walk-in cooler at time of inspection; air temperature reached 2C by end of inspection. Ensure to monitor temperature of all coolers daily.

Observation: 1) Opened bags of dry ingredients were still not being stored in pest proof containers with proper lids.
2) Ice scoop was stored directly in ice.
3) Raw chicken stored directly on top of a box of butter and bottled water. Eggs stored above ready-to-eat foods
Corrective Action(s): 1) Store all opened bags in pest proof containers with lids
2) Store ice scoop in a designated clean container to prevent handle from contaminating the ice.
3) Operator relocated raw chicken and eggs to lower shelves at time of inspection. Store all raw meats and eggs below ready-to-eat food and vegetables.

- High-temperature dishwasher reached 72C at plate surface level during rinse cycle
- FOODSAFE certified staff on-site at time of inspection - good
