Reference NCR report F232309. - Mechanical dishwasher (extended care kitchen) has a hot water sanitizing rinse (OK). Verify gauge on machine is accurate. Test strips (T-Sticks) are now provided to verify temperature. Also, ensure that bowls and cups turned over during cycle are re-washed if filled with water. Utensils / dishes are to be air-dried. Note: Hogg 3 roll-in cooler- your records show 45 F - 43 F - 44 F (today) but my check shows 40 F inside this fridge which is the required temperature. Have staff re-check cooler if >40 F. Note: Only one fridge and 2 sinks available on W3 Oceanside - OK.
