Observation: Old food debris and flour accumulation noted on dry ingredient storage bins, on scoops, on some equipment, and under equipment in hard-to-reach areas.
Corrective Action(s): Clean and saniitize your dry ingredient bins and scoops, and do so regularly.
Clean and sanitize high-touch surfaces such as cooler/equipment door handles frequently throughout each day.
Deep cleaning in all hard-to-reach areas must be done at least once a week.

Comments

- Hand washing sink properly supplied with hot/cold running water, liquid soap, and paper towels.
- Bleach sanitizing solution available in spray bottle at 200 ppm (chlorine residual).
- Low-temperature chemical dishwasher dispensed 50ppm chlorine (residual) to the dish surface, detected after final rinse cycle. Good.
- All coolers were measured at 4C or colder.
- Freezer temperatures satisfactory.
- Hot-held soups measured at 60C or hotter.
- Reviewed thawing and reheating procedures (for soup). OK.
- Food stored off the floor and protected from contamination.
- General sanitation requires improvement, please see violation code 306 above.
- Bi-weekly pest control in place. No signs of activity at time of inspection.
- Operator has valid FoodSafe level 1 certification.
