- quat sanitizer measured 200ppm quats in spray bottle and sanitize compartment of sink
- discussed washing of meat grinder
- ensure that meat is thawed either in the sink with cold running water, or in the cooler overnight
- hot hold cabinet off and empty at time of inspection; food is cooked to order
