Observation (CORRECTED DURING INSPECTION): During time of inspection, bleach solution in spray bottle was >200ppm (bleaching out test strips)

Observation: During time of inspection, foods observed in prep cooler by main cook line contained containers of food that were not kept covered
Corrective Action(s): - Ensure that all food products are sealed or covered with lids/ plastic wrap to further protect foods from contamination

Observation: During time of inspection, the following observations were made:
1) Sink cabinets underneath handwashing station located opposite of main cook line appear to be water logged and not maintained in good sanitary condition
- Caulking/silicone at this handwashing sink in need of repair
2) Washroom #2 located in 'sweets preparation area' was lacking hot water
- Operator informed a sign will be put up identifying 'out of order'
- Adequate alternate handwashing sinks and washrooms available for employees
Corrective Action(s): 1) Ensure that previous mouldy silicon is removed and re-caulked
Ensure that sink cabinet is repaired and maintained in good sanitary condition, all surfaces and equipment in facility must be durable, easily cleanabe and impervious to moisture

- All temperatures meet health requirements:

* Freezers at -18C
* Display coolers at 4C or below
* Hot holding unit maintaining food temperatures of >60C during time of inspection
- Low temperature dishwasher #1 dispensing adequate chlorine sanitizer (50ppm) residual at final rinse
- Sanitizer log available and maintained for this dishwasher
- Low temperature dishwasher #2 dispensing adequate chlorine sanitizer (50ppm) residual at final rinse
- Bleach sanitizer available along main cook line, concentration at 100- 200ppm
- All foods covered with plastic wrap or lids (except for the above noted)
- Good food storage and labeling practices observed
- All employees were wearing hair restraints during time of inspection
- No evidence of pests detected during time of inspection
Note: Ensure to plugs up any holes >1/4" to prevent entry of pests even if the holes are within interior walls
