Observation: 1) Sandwich prep has been moved to the main cook line. Condiments will be stored on ice for a maximum of 2 hours then moved back into the cooler.
2) Not all cooler temperatures are being recorded.
Corrective Action(s): 1) Revise and submit an updated Food Safety Plan for Sandwich prep by the end of the week.
2) Start recording temperatures for all working coolers along with any hotholding.

Main Kitchen:
Coolers in use are below 4 degC
Soup was 68 degC
No other hotholding was being done at the time of the inspection.
Dishwasher rinse temperature was 73 degC at plate level
200ppm Quats sanitizer was available for use.
Exhaust hood has been serviced.
No pest concerns noted
Chef and Manager have valid FS Level 1 certification

Catering Room:
This room is being used mainly for storage now.
No pest concerns noted

Pasta/Stir-fry Station:
This station is no longer in use. Some of the coolers are still being used to store foods. All coolers in use were below 4 degC.
No pest concerns noted

Coffee Station:
This area used to be the Sandwich Station. It has now been converted into a bistro. Plans were submitted and approved. A dump sink and separate hand sink is in place.

200ppm Quats is available for use. ENSURE SANITIZER IS REFRESHED EVERY 1-2 HOURS OR AS NEEDED.

**AS PER MGR, THE CAFETERIA AND CAFE ARE NO LONGER OPEN TO THE PUBLIC AND ARE FOR EMPLOYEES ONLY FOR THE TIME BEING. SINCE STAFF WORK FROM HOME 4 DAYS A WEEK, THE CAFETERIA ISN'T VERY BUSY.
