Observation: Discussed manual diswashing procedures with owner, as owner sometimes washes dishes manually
Correction: Ensure proper procedures are followed:
1. Wash with hot soapy water
2. Rinse with hot clean water
3. Soak in bleach sanitizer for 2 minutes (1/2 teaspoon bleach/1L water)
4. Air Dry
*Do not mix soap with bleach as it reduces the effectiveness; and do not rinse after sanitizing

Observation: Meat slicer has rodent droppings on surfaces.
Rodent droppings observed on counter housing meat slicer.
Utensil tray stored on top of grease trap. Grease trap covered in rodent droppings.
QUAT sanitizer solution has been dispensed at concentrations too high - discussed with staff.

Correction: Clean and sanitize any food contact surface contaminated by rodent droppings
Remove all dishes and equipment from lower shelves until rodent infestation is eliminated.
Spray rodent droppings with 200ppm chlorine solution or equivalent. Remove droppings from area. Wet affected area with 200ppm chlorine or equivalent and soak area.
Ensure staff are dispensing sanitizer solution at 200ppm - obtain test strips.

- Facility has been thoroughly cleaned and sanitized
- Front hallway has been partially organized, cleaning has occurred in this area
- Dishwasher has been repaired; reaching 77.4 degrees Celsius

ITEMS TO BE CORRECTED:
- Spray faucet requires replacement - owner to replace by next routine inspection
- Continue to monitor and trap for rodents
- Clean bottom shelf of "brown sugar" storage area and shelves of rolling racks as these areas continue to have rodent droppings contaminating surfaces
- Continue to clean and organize, especially any items making cleaning difficult including hallway
