Observation: Both fridges are above 4 Celsius. Pizza prep cooler is 8.2 Celsius. Walk-in fridge is 7 Celsius. Repair by Monday. Fridges MUST maintain food tempertures below 4 Celsius.
Note that very few pizzas appear to be made; premise has switched to primarily baking traditional flatbreads. Only one block of cheese and about 2 dozen eggs kept in walk-in fridge. Pizza meats kept in freezer.

Observation (CORRECTED DURING INSPECTION): Bleach in spray bottle is far too strong; bleached test strip white. Use only a 1/2 teaspoon of bleach for spray bottle.

Observation: Most shelves, walls, corners and outsides of food bins are very dirty, grimy. Clean the whole kitchen and all equipment.

Observation: Counter by 3 compartment sink and enclosure around new hot water tank are unfinished wood, not smooth washable. Paint or otherwise re-finish these surfaces so that they are smooth and washable.

Equipment/facilities/hot & cold water for sanitary maintenance not adequate [s. 17(3); s. 4(1)(f)] (Premise has upgraded sinks without sufficient hot water. New hot water tank can not fill the three compartment sink with hot water. Submit specs for the new tank. Hot water system must be upgraded so that sinks can be filled for proper dishwashing. )

No sign of pests.
Hand sink is stocked and working.
New hot water tank installed; 50 gallons and good recovery rate. Able to fill three compartment sink and lots of hot water left for hand washing.
