Chlorine sanitizer seems thicker than usual (12% chlorine, clear liquid)
Corrective Action(s): 1. Check with manufacturer and chemical supplier to ensure this is the correct chemical for this dishwasher.
2. Fix dishwasher to ensure it measures at minimum 50-100ppm Chlorine on plate surface.
In meantime, fill up the 2 compartment sink with water and bleach (available on site), 100ppm chlorine to sanitize dishes in sink.
Use test strips available.

-Hand wash stations are fully supplied with hot and cold running water, liquid soap and paper towels in dispensers
-Operators had clean clothing for food preparation
-Staff and Public washrooms appear clean and are fully supplied for hand hygiene

Food Safety
-Food in cold holding Coolers are below 4C
-Operator has installed a new line cooler to separate vegetables from meats. Thank you.
-Food in cold holding Freezers are below -18C
-Cooling - Cooling is done in batches, shallow pans
-Specialized Food Processing: meat cooked on spit - operator is using secondary cook step to cook on pan/grill after slicing meat from spit.
-Approved Food Source - food ingredients are from an approved source. Lamb from supplier only. Fish and squid/octopus from approved suppliers only.
-Food is stored in covered containers; organized in walk in cooler

Maintenance and Sanitation
-2 Compartment Sink is fully supplied with bleach and dish detergent
-Sanitizer bottles/buckets - have 200ppm Quats (600ppm measured - instructions provided to dilute with water)
-Storage of chemicals is separate and away from food
-Pest control - there are no signs of pests at the time of inspection.
