Follow up Inspection:

-The chef had reviewed the routine inspection report with staff and improvements were noted:

-Handsinks were adequately supplied with liquid soap and paper towels.
-Staff were washing their hands properly and frequently prior to handling food.
-Handwashing signs were provided to the head chef.

-The prep. cooler was repaired and it was 4 degrees C (40 degrees F) or colder.
-A container of chlorine sanitizer was available for the dishwasher.
-Dishwasher final rinse chlorine residual was > 50 ppm at the plate.
-Wiping cloths were kept in 200 ppm QUATS sanitizer in between use.

-It was mentioned that the deep cleaning of baseboards in the walk-in-cooler will be done a weekly/bi-weekly basis and/or they will speak to the janitorial company to perform a deep clean once/month.

As mentioned in the routine inspection report, please seal the hole in the wall and the broken floor tile in 6 months time.
