Commissary kitchen:
- The facility is equipped with hot & cold running water
- High temp dishwasher reached >71C at plate's surface
- Walk-in cooler measured 4C. Equipped with a working thermometer.
- Bleach available on site.
- General maintenance is adequate.

Operation:
- No changes to the menu
- Same cambros are used for delivery (insulated and transferred with ice packs)
- QUAT sanitizer measured 400ppm initially. Ensure that 200ppm QUAT sanitizer is maintained as higher concentration may cause chemical contamination of foods.
- It is encouraged that the operator obtains QUAT test strip.
- Sanitizer bottle is not labelled. **ENSURE TO LABEL YOUR SANITIZER BOTTLE TO PREVENT ACCIDENTAL USE.
- The operator affixes production date on labels. At retail stores, foods are discarded within next 2-3 days.
