Observation: The operator is using a rubber mat to temporarily cover the top of the Greasetrap Interceptor and make it flush with the floor. He is proposing to use plywood and tile to seal the top of the Greasetrap Interceptor as a permanent solution.
Corrective Action(s): Install the plywood that is flush with the floor and ensure all cracks are completely sealed. This is required to properly mop the floors of the kitchen.

- Operating Permit posted in a conspicuous location.
- Paper towel dispenser is installed at the front handwashing sink. Ensure that this handwashing station is fully stocked with soap, and paper towels at all times.
- General sanitation has improved. Follow your regular cleaning schedule.
- Food items are mostly covered with plastic lids or lids.
- FOODSAFE certified staff on duty. Verified at the time of the inspection.
