Note: A few mouse droppings noted on either side of fridge in Dogwood East and Elm South. Pest control company on site weekly, notify pest control company of finding at next visit. Clean out droppings and sanitize area, continue to monitor and follow pest control recommendations.

General observations:
√ Coolers ≤4°C, Freezers ≤ -18°C, Hot holding ≥60°C in main kitchen and all wards
√ Good food handling practices noted such as thawing in cooler, food labelled and raw meats stored separately from all other foods
√ Food up off floor ≥6”, good stock rotation noted
√ Hand wash stations fully stocked with hot and cold running water, liquid soap and paper towel
√ Quats sanitizer available at 200ppm in buckets and spray bottles
√ High temperature dishwashers all sanitizing at ≥71°C
√ Three compartment sink stocked with dish soap, sanitizer, hot and cold running water
√ Equipment all appeared to be in good working order and was well organized
√ General sanitation and maintenance is excellent
√ No signs of pest infestation noted with exception of above noted areas
√ Thermometers present
√ Test strips present for monitoring sanitizer bucket levels
√ Temperature logs maintained and no issues with equipment have been noted
√ Staff with FoodSafe (or equivalent) present.
√ No concerns with staff hygiene or food handling noted during inspection
