Comments

- Kitchen and equipment maintained in sanitary condition. Cleanliness of floor around legs/wheels of equipment has improved since previous inspection.
- Handwashing sinks were supplied with liquid soap and paper towel
- High temperature dishwasher was operational and met required sanitizing temperature. Rinse temperature was 77.6C at dish surface measured with min/max thermometer.
- Coolers and freezer were operating at required temperatures.
- Temperatures checked:
- Walk-in cooler 1C
- Single door reach in cooler 2C
- Walk-in freezer -18C
- Monitoring and record keeping:
- Daily food cook and cold holding service temperature recorded.
- Temperatures of cold holding units checked and recorded twice daily
- Dishwasher wash and rinse checked and recorded three times daily
- Records maintained and up to date.
- Foods were stored in a manner to prevent contamination. Wrapped/covered. Raw meat products stored beneath ready to eat items.
- Dry storage room organized with food products stored on shelving
- In use wiping cloths kept in quats sanitizer solution (200ppm).
- Chlorine sanitizer solution (200ppm) present from dispenser at 3 compartment sink for manual warewashing as needed.
- No signs of pest infestation noted at time of the inspection. Pest control contract in place with monthly service.
- Foodsafe requirement met at time of the inspection. Support Services Supervisor present and has completed Foodsafe level 1.
