Observation (CORRECTED DURING INSPECTION): 1) There was no sanitizer readily available in any of the meat preparation areas. The red sanitizer pails were empty and stored upside down on all stations.
2) Cloth rags were stored on food counters all around the facility.
Corrective Action(s): 1) Operator filled sanitizer pails (4) from the dispenser at the time of inspection. Ensure sanitizer is kept at all food preparation stations for safe food handling. Use the test strips to ensure 200 ppm QUATS is maintained in the sanitizer at all times.
2) Operator moved the rags in sanitizer pails at the time of inspection. Do not leave rags on counters as that allows pathogens to grow which can cross contaminate food.

Routine inspection conducted.

Temperatures:
- Display coolers: <4C
- Meat processing area: <10C
- Walk-in meat storage area (extension of meat processing): 3C

Sanitation:
- Hand washing sink was adequately equipped with hot/cold running water, liquid soap, and disposable paper towels.
- Sanitizer dispenser dispensed 200 ppm QUATS solution. Test strips were available on site.
- Knives were in good sanitary condition.
- Meat cutter, meat grinder, and meat slicer were in use at the time of inspection.
- 2-compartment sink had plugs.

Storage:
- Deliveries are stored on wooden pallets at least 6" high.
- Items are labelled and delivery lots are tracked.

Pest Control:
- No signs of pest activity noted at the time of inspection.
- Facility is monitored by a professional pest control company.

Administration:
- Temperature logs are up to date.
- Pest control inspection reports are kept in records at the main office.

COVID-19 Safety:
- T&T corporate COVID-19 Safety plan is available on site. It has also been circulated via email and messaging services to all staff.
- Temperature checks occur at the store entrance for all staff and customers.
- Double masks are worn by most staff.
- High touch surfaces are disinfected frequently.
- Breaks are staggered.
- Lunch room has dividers.
- Maximum occupancy is posted in common staff areas.
