Observation (CORRECTED DURING INSPECTION): Quaternary ammonium compounds (quats) sanitizer available in containers with wiping cloths was measured measured at 50 to 100 ppm active quats.
Corrective Action(s): Sanitizer solution was changed and tested at 200 ppm. Ensure that sanitizer is maintained at concentrations required for effective sanitizing of food contact surfaces at all times (e.g. 200 ppm quats). Change sanitizer as needed to maintain these concentrations. It is recommended to obtain quats test strips to test sanitizer solution.

- Walk in freezer at -19 degrees C
- 2-door under counter freezer at -24 degrees C
- Prepared food items are covered
- Hot holding internal food temperatures at 60 degrees C or more
- A probe thermometer is available for internal temperature checks
- Hand washing stations are unobstructed and supplied with hot and cold running water, liquid hand soap, and single use paper towels
- Quaternary ammonium compounds (quats) sanitizer available from dispenser at 200 ppm quats
- High temperature dishwasher measured 76 degrees C at the utensil surface during the final rinse (minimum 71 degrees C at the utensil surface)
- Cleaning chemicals and similar products are stored in designated areas away from food
- Staff personal belongings stored separately from food
- Non-latex gloves in use
- FOODSAFE requirements met at time of inspection. Certificate produced for staff member on site expires in 2023.
- General sanitation good
- No signs of pest activity
- Discussed cleaning and sanitizing of in-use utensils and equipment. It was stated that these items are washed, rinsed, and sanitized at a frequency more often than every four hours. It is recommended to obtain a timer or document in-use utensil cleaning and sanitizing if they are maintained at room temperature.
