Observation (CORRECTED DURING INSPECTION): Cold potentially hazardous food in the prep cooler were measured above 4C; ranged between 11-15C. Noted items include: pizza sauce, chopped mushrooms, deli meats (3 trays), shredded cheese (2 trays), salads (2 trays), cream sauce. According to staff, the food items were stored in the prep cooler for over 4 hours.
Corrective Action(s): Staff discarded all noted food items. Ensure cold potentially hazardous foods are stored and maintained at 4C or less.

3. Two buckets of sauce stored in the undercounter cooler at the back kitchen was noted uncovered. Date to be corrected by: Immediately

2. Ensure proper in-use scoops with handles are used to prevent potential contamination of food. Single-use items are not intended for re-use.
