- Temperature Control: Monitoring required. Gauges are to be kept securely fastened inside all refrigeration units. Internal temperature monitoring is required.
- Mechanical Dishwasher: High Temp = Ok. (Hot) Ensure all food contact surfaces are being washed and disinfected after use or on a timely manner. All items are to be stored in a sanitary manner. (ie: Clean storage containers - upper shelving)
- Wiping cloth storage: Limit the amount of cloths being used. Cloths are to be kept completely submerged in a sanitizer at all times. Monitoring required. Test strips are to be kept on site.
- Food Storage: Ok.
- Chemical Storage: Ok.
- Sanitary Facilities: Ok.
- Sanitation: All items are to be stored in designated areas. (ie: on shelving off of floors.) Facility is tp be kept clean and organized at all times. Areas along walls, under equipment, is to be cleaned regularly. Any/unused items are to be removed to free up space.
- Staff Hygiene: Discussed.
- Garbage, Composting and Recycling Storage: Discussed. All items are to be stored in covered, rodent proof containers.
- Meat slicer cleaning and disinfection discussed.
- Ice bin cleaning and disinfection discussed.
- Pest Control: Monitoring Program is in place.
- Structurally: Deteriorating surfaces noted. Surfaces are to be kept in good repair. Work prep table is to be kept securely fastened.
