Observation (CORRECTED DURING INSPECTION): Operator began production of shelf stable jalepeno jelly product without approval.
Corrective Action(s): Correction Order issued. Stop production and sale/distribution of jelly product until health approval has been given and until testing of product demonstrates the product is shelf stable. All jelly product (14 cases of cranberry jalapeno jelly and 69 cases of blueberry jalapeno jelly) to be held at facility in the meantime.

**Before production of any new product, health approval must be obtained.

- Hand sink supplied with hot and cold running water, liquid soap, and paper towels
- Bleach available for sanitizing surfaces. Facility was not in production at time of inspection.
- Cooler was measured to be at 3C
- Three-compartment sink available for manual warewashing
- Temperature records well maintained
- Pest control is in place
- Food storage practices good, all food stored off the floor
