Observation (CORRECTED DURING INSPECTION): 1) Rice scoop stored in standing water at 20C. 2) Sanitizer in spray bottle measured 0ppm bleach sanitizer.
Corrective Action(s): 1) Please ensure that in use utensils such as rice scoop is stored in ice water bath at 4C or colder. 2) Remix so there is 100ppm bleach sanitizer ready to use.

Observation (CORRECTED DURING INSPECTION): Repeat violation. Red tray and stainless steel bowl stored inside kitchen handwashing station.
Corrective Action(s): Collect all items to wash in the designated warewashing sink. Handwashing sink is for handwashing only and must not be obstructed. Correction Order issued due to repeated infraction.

Observation: Mice droppings identified in several areas - around chest freezer in the back, near pop cooler, prep cooler and unit storing take out containers in the front. Multiple drain flies also noted in the warewashing area.
Corrective Action(s): General sanitation needs to be improved. Conduct a deep clean by follow up inspection. Remove all food equipment and fully clean all areas to deter pest.

Observation: Food debris noted in several refrigerating units (e.g. prep coolers, pop cooler, small fridge in the back). Mildew and build up noted in two compartment sinks and walls.

*Please forward pest control report from past 2 months to undersigned for review. Reviewed glove policy again. Discard single use glove after use, wash hands and then wear a new pair of gloves. Clear gloves are used for handling food in the front, blue gloves for raw meats and yellow gloves (reusable) is for warewashing.
