Comments

Cleaning/sanitation has improved in the dishwashing area (all of the buckets have been organized) and near the walk in freezer. The floor underneath the pallets in the dry storage area still need some more cleaning as there is still debris.
Cooler in the side area has been repaired and is now at 4 deg C and is where the tofu for the miso soup is being stored. Remove the empty glasses from the cooler as they may block the cold air flow. Staff also keep a container of tofu in water out on the table for immediate use (container is submerged in ice).
All sauces in squeeze bottles are stored in a container with ice when brought out.
Ice machine has been repaired.
Handwashing station still needs a barrier in between the sink and the tempura station
