Observation (CORRECTED DURING INSPECTION): Food containers in the chest freezer were uncovered.
Corrective Action(s): Ensure all foods are properly covered with food grade materials to prevent potential contamination of foods. Containers were covered with plastic wrap at the time of inspection.

Observation: Kitchen was found to have a carpet mat.
Corrective Action(s): Mat must either be replaced or removed. All surfaces must be smooth, non-absorbent, and easily cleanable.

Observation: Bleach spray bottle label has fallen off.
Corrective Action(s): Ensure all chemicals are properly labelled to prevent accidental mixing or misuse of chemicals. Once labels fall off, containers must be relabelled.

Comments

-Prep cooler was at 4C (top and bottom). Facility is only using one prep cooler - other cooler is unplugged and used for dry storage.
-Front kitchen upright cooler was at 4C
-Back kitchen upright cooler was at 4C.
-Back kitchen undercounter cooler was at 2C.
-Chest freezer was at -24C.
-Hot holding was greater than 60C. Foods were reheated to greater than 71C prior to hot holding.
-Thermometers present in cold holding units. Temperatures are checked and recorded daily.
-Hot potentially hazardous foods were rapidly cooled and at 4C or less.
-High temperature dishwasher had a final rinse temperature of 76C on the dish surface (minimum 71C required for proper sanitizing).
-Handwash stations accessible and supplied with hot and cold running water, liquid hand soap, and single use paper towels. If cellphones are used in the prep area, cellphones must not be placed on food preparation surfaces and staff must wash hands after touching phones to prevent potential cross contamination of foods and food contact surfaces.
-Bleach sanitizer was diluted to 200ppm at the time of inspection. To prepare 100ppm to 200ppm bleach, add 1 teaspoon of bleach per litre of water.
-Food items properly stored off the floor.
-General sanitation good at the time of inspection.
-Facility is serviced by a professional pest control operator on a monthly basis. No signs of pests noted at the time of inspection.
-Washroom clean and well maintained.
-FoodSafe Level 1 valid until April 9, 2023.
-Health Permit hand delivered to facility. ensure permit is posted in a visible location.
