Observation (CORRECTED DURING INSPECTION): 2 containers of beans cooked from previous day were noted properly cooled. Internal temperature of the food products were 18C and 22C. Both containers of food were discarded. Reviewed cooling procedure with operator. Ensure all food products cool from 60C to 20C in the first 2 hours, then from 20C to 4C in the next 4 hours.

Routine inspection conducted and the following were noted:
General sanitation was satisfactory
No pest activity noted
All cooler units at 4C and equipped with thermometers.
Freezer unit at -18C.
All food items stored at least 6 inches off the ground and properly covered.
3 compartment sink method setup. Sanitizing sink was filled with a 200ppm quats solution.
hot holding of foods at 60C or greater internally.
Hand washing stations satisfactory.
