Observation (CORRECTED DURING INSPECTION): Ice scoop in bar area observed laying in ice. The handle can contaminate ice when it comes in to contact with the ice.
Corrective Action(s): Ensure ice scoop is stored outside ice in a clean container or at very least is upright in ice during busy times.

Observation: Gap at floor level between two receiving bay doors has not yet been repaired.

Corrections Noted:
√ Required cleaning including under cooking line area and prep areas done. **Two areas under two pieces of line equipment were missed and pointed out to head chef - clean these areas by Jan 30, 2020
√ White cutting boards on the main line have been planed
√ Bar glass washer had 50ppm chlorine and is now being monitored and recorded daily. **Colour comparison chart on test strip bottle is very worn with concentration number worn away. Bottle almost empty, obtain a new bottle of strips with a new colour comparison chart.
√ No signs of new pest activity noted
√ Line cooler at 40F during inspection and record sheet has been updated to include checks for staff to ensure any issues with coolers are brought up to management in a timely manner
