Observation (CORRECTED DURING INSPECTION):
Food processing area added to the storage section of the premises. Chocolate making will be done in the new food processing area. PRIOR to adding food items and/or equipment, you must obtain approval from your local Environmental Health Officer to ensure it meets health regulations.
Corrective Action(s):
A floor plan drawing requires to be submitted showing the location of equipment, coolers, sinks, shelves, tables, etc.. At this time, the new food processing area meets health standards and processing can occur.

311 - Premises not maintained as per approved plans [s. 6(1)(b)]
Observation:
The roof is leaking is various areas and dirty liquid/water is falling in food processing and storage areas. This liquid could contaminate food and food contact surfaces, which could cause people to become ill when they consume the food.
Corrective Action(s):
Repair or replace the roof so it does NOT leak. It is recommended that a professional roofing company is contracted to resolve the problem.

312 - Items not required for food premises operation being stored on the premises [s. 18]
Observation:
There are items being stored on the floor which makes it hard to clean, and provides areas for pests to live in. Some of these items (car tires, pieces of wood, etc.) do not help run the business, and are adding clutter to the space. This makes it difficult to clean.
Corrective Action(s):
Remove all items off the floor and store on racks, shelves or pallets that are 6" off the floor (a mop can get underneath). Remove, sell, or discard all items that do not contribute to the business running on a daily basis.

Comments

A routine inspection was conducted, the following observations were made:
- Coolers 4C or colder; freezer was -20C; thermometers present; and temperatures recorded daily.
- Hand sinks stocked with liquid soap, paper towels, and running hot and cold water.
- Bleach sanitizer in spray bottles had [Cl2] of 200ppm, chlorine test strips present. Quats sanitizer will also be used in the future. Ensure to purchase and use Quats test strips to ensure the strength is correct (200ppm).
- All foods stored in food grade containers; covered; labeled; date coded; foods stored in groups; and foods stored 6" off the floor on racks, pallets, or platforms.
- No expired foods in use. FIFO rules being followed.
- General sanitation level is good. Monthly monitoring of pests being done by a professional company. Ensure to clean up any old signs of pests (droppings), so that you can monitor if new droppings found. This indicates that there is an active problem.
- Ensure pallets are moved and the floor underneath is cleaned on a regular basis (weekly). This will discourage pests from living under the pallets, and help with pest monitoring.
- Have the exhaust canopies professionally cleaned in the near future. Dust and food debris (flour, etc.) will accumulate on the canopies and inside the exhaust vents leading to the roof. This will attract pests and could be a fire hazard. Schedule the cleaning regularly, as per the professional cleaning company's recommendations.
- FSP & SP are approved. Submit FoodSafety Plans for the new chocolate food products, and submit a revised Sanitation Plan for the additional food processing area.
