Observation (CORRECTED DURING INSPECTION): -Dirty wiping cloths noted in several locations on counters and no sanitizer bucket - this violation is ticketabel offenses ticket will be on hold
-Mold noted in ice machine
Corrective Action(s): - Wiping rags must be clean and store in a bucket of sanitizer at all time for wiping counters
- If spray bottle sanitizer is being used then use paper towel only
-provide bucket of sanitizer at each food preparation area (front and kitchen) and keep it away from foods- two bucket of sanitizer are made at time of visit.
- Clean and sanitize the ice machine- operator started cleaning at time of visit.

Corrective Action(s): Corrected at time of visit. Ensure hand washing sink is accessible at all time.

Observation: -Mold noted inside ice machine and ice scoop noted inside the ice machine with handle touching Ice
- Opened can of foods noted in cooler ( tomato paste, corn ...)
-Cloth towels are covering noodles in cooler
-Noted several opened dry good package
Corrective Action(s): -Discard all ice , keep ice scoop in clean container above the ice machine
-Discard potentially contaminated foods in cans- after opening a can, foods must be transferred to a food grade container with proper lid
-Do not cover any foods with cloth towels - use plastic wrap or food grade material
-Protect dry goods after opening by storing them in closed bin

Comments

Facility owner reported that the facility is going through renovation by the end of July ( fully renovation along with new equipment).

-Hand sink available and stock with running water, liquid soap,and paper towels
- All freezer units below -18C
- All cooler units below 4C
- Quats sanitizer in spray bottle >200ppm
- General sanitation is good
-Hot holding units > or equal to 60C

** Follow proper manual dishwashing - wash, rinse, sanitize -air dry- organize the dish washing area
** Rubber gloves using for handling hot foods are to be discarded at the end of cooking -these gloves can not be washed and sanitized
** Ensure to have copies of Foodsafe training for staff on site

All the issues to be fully addressed by follow up visit .
