Observation (CORRECTED DURING INSPECTION): 1) Multiple flour containers had build-up of flour and food debris.
2) Small bowls were found inside containers that were used as scoops.
Corrective Action(s): Ensure that all equipment/dishes/food contact surfaces are maintained in good sanitary condition.
1) Wash and sanitize the container on regular basis to prevent build up of food debris/filth.
TO BE CORRECTED BY - Immediately
2) Small bowls were removed from the containers. Either store them outside the container in a sanitary condition or store scoops with handle up inside the container.

Comments

Routine inspection conducted at food facility. In general, the facility was maintained in good sanitary condition.

The following observations were made during the inspection:

Temperature:
- Walk-in cooler (x2) recorded at 4C.
- Prep cooler (x2) maintained at 4C or less.
- Front pop cooler noted at -1C.
- Chest freezr at -21C.
- Stand up freezer at -13C.
**Ice build-up noted in the chest freezer. Consider defrosting/service the freezer. Re-organize the frozen food stored in the freezers.
- Hot holding units for pizza at 61C.
- Temperature logs were maintained and found up-to-date.

Hygiene and Sanitizing:
- Hand wash station was adequately stocked with hot/cold running water, liquid soap, and single-use paper towels in front service area.
- Bleach solution in 3-compartment sink noted ~100ppm.
- Utensils and tongs were found in sanitary condition.

Storage:
- All food items were stored at least 6" off the floor.
- All products were either in original packaging or covered inside coolers.
- Raw meat was stored in bottom shelves and ready to eat food was either stored in top shelves or separate from raw meat. Good.
- Storage area was well-organized.
- Chemicals and cleaners were stored separate from food preparation areas.

Pest Management:
- No visible signs of pest activity observed at the time of inspection.
** To prevent entry of pest/rodents, keep the screen door closed.

Administrative:
- Operating permit was posted in a conspicuous location.
- Operator has valid FoodSafe Level 1 certificate.
